I don’t know about other teachers, but when I’m teaching, I get SO hungry. I’m constantly sneaking snacks or offering snacks to my students so I don’t feel as bad eating in front of them! When it comes time for lunch, I’m ravenous. I like packing a variety of food that doesn’t need to be heated to save time. One of my favorite lunches to bring is Bean Salad. It’s so easy to make and lasts all week! I used the Walmart Grocery app to order the ingredients I needed and they were delivered to my doorstep the very next day! So convenient for working moms.
Here is the Bean Salad Recipe I LOVE! I hope you enjoy!
Start by combining green beans, garbanzo beans, kidney beans, and wax beans in a large bowl.

Next, chop 1/2 cup of celery, 1/2 cup of onion, and a 1/2 cup of green pepper. Add these to the bowl of beans.

Whisk together 1/2 cup of rice vinegar, 1/2 cup of canola oil, and 1/4 cup of sugar. Once the sugar has dissolved, pour dressing over top beans and stir to combine.

DONE! Marinate it overnight for best tasting results! This lasts all week! I hope you enjoy!
